Bikini Recipe

Yields 10 servings

Ingredients for the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Cocktail (yields 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Method

For the Cordial: Place every components inside a pot, heat until it reaches a light boil, mixing until the sugar dissolves. Then, remove from the heat and leave to reach room temperature completely. Decant into an sealable bottle, seal and refrigerate it in the refrigerator, where it will keep for about four weeks.

For the Cocktail Base: Mix every spirits and syrup into a big jug, let it rest for one hour, then strain preferably using a fine cloth, to ensure it's perfectly clear.

For serving: Measure 85ml of your premix to a stirring glass filled with ice, and agitate gently for one minute until cold. Strain into a cold coupe glass or equivalent, garnish with some cranberries and complete it with a brief mist with the mandarin essence over the drink.
